Jhatpat Masaledaar Karela /Spicy Bitterguard
Karela, Bitter guard, everybody knows its benefit, but i have never seen much people fond of it. Even few years back i was in the list. Since I tried it hardly once or twice and afterwords never touched it. I am a complete sweet person. Can live on sweets, So the feeling of bitter taste never allowed me even taste it a bit. Seeing my family enjoying this, always surprises me how they enjoy this bitter stuff.
While i was doing graduation, One fine day my elder sister made stuffed karela and told me to try this. after my denial she asked me to taste a bit of stuffing of karela, unwillingly i tried that and i was amazed with the taste. Then curiously i tried karela and that day onward s i am fond of it. I make my karela most of the time same way she told me. But now i know the main ingredients, So i make it so many ways. This is one of those ways. I have never heard that even a single kid enjoying this vegetable. But i have seen my daughter eating this. I modified it to change its taste from bitter to something batter so that kids can also enjoy this. Try it friends i am sure you will love it.
Preparation time- 10 min
Cooking time - 10-15 min
Bitterguard - 4-5 pealed and chopped as per your wish
Onion - 1 small (optional)
Tomato - 1 medium (optional)
Ginger - 1 inch piece (optional)
Garlic - 4-5 pods (optional)
Chilly pdr - 1/2 tsp
Salt - 1/2 tsp
Amchoor pdr - 1 tsp
Cumin Seeds - 1/2 tsp
Garam Masala - 1/2 tsp (optional)
Coriander Seeds - 1/2 tsp (crushed)
Take your ingredients- (forgot to add karela)
Heat oil in pan and
add chopped bitter guard
Fry them well
When 80% done, spread them at sides of the pan and make space in the middle
Now add cumin seeds and coriander seeds
Add chopped onion, tomato, garlic and ginger
Add all spices
Mix well, cover and cook for 2 min.
Then cook for more 2-3 minutes

- You can make this dish with only spices and bitter guard, I added onion, tomato to increase the quantity a bit.
- Amchoor powder is main ingredient in this, do not avoid it.
- You can add any other masala, even sometimes i try it with sambhar powder, and it tastes great.
- You can also cut karela/bitterguard lengthwise, i was in rush, so made simple rounds.
